Breakfast
Apple Sausage Oven Pancake
1 package Brown & serve sausages
1 cup Bisquick
1/2 teaspoon Ground cinnamon
1/2 cup Milk
1 Egg
1/2 cup Chopped pared apple
Maple syrup
Heat oven 450 degrees. Grease 8x8x2" baking dish. Brown sausages as directed on pkg. Whisk Bisquick, cinnamon, milk and egg with together until smooth. Stir in apple. Pour in dish; arrange sausages on top. Bake until light brown, 20 - 25 min. Serve with syrup.
Appetizers
Ham Rolls
3 pkgs. party rolls
4 oz. Swiss cheese
8 oz. thin-sliced ham
Filling :
2 sticks softened butter or margarine
4 tbsp. mustard
1 tbsp. Worcestershire sauce
1 med. onion_ finely grated
3 tbsp. poppy seeds
Mix the filling ingredients together and set aside. Slice rolls in half. Spread filling on both sides. Put ham and cheese on each bottom piece and replace the top. Bake, uncovered at 350 degrees for 10 to 15 minutes.
Bacon-Wrapped Scallops
24 lg. sea scallops (about 2 lbs.)
12 slices bacon
Seasoned pepper
Rinse scallops with running cold water, pat dry with paper towels. Cut each bacon slice crosswise in half; wrap each half around a scallop, securing with a toothpick. Sprinkle scallops lightly with seasoned pepper. Preheat broiler. Place scallops on rack in broiling pan, with bacon facing the heating element. Broil 8 to 10 minutes until scallops turn opaque throughout, using tongs to turn scallops frequently so bacon will brown evenly on all sides

Christmas Ham Steaks
4-6 (1/2" thick) slices of ham
1 1/2 c. cranberry juice cocktail
1/2 c. brown sugar
1/2 c. raisins
1/2 c. orange juice
2 tbsp. cornstarch
Several dash of ground cloves
Arrange ham steaks evenly in a 13x9x2 inch baking dish. In saucepan, stir together all other ingredients. Cook and stir mixture over medium heat until thick and bubbly. Pour over ham steaks. Bake, uncovered, in 350 degree oven for 35 minutes.
Holiday Stuffed Pork Roast
3/4 cup Slivered almonds
2 tablespoons Butter or margarine
3/4 cup Sliced green onions_ br>3/4 cup Chopped celery
4 cups Cooked brown rice
3/4 cup Orange juice, divided
2 tablespoons Grated orange peel
1 tablespoon Diced crystallized ginger, divided
1/2 teaspoon Salt
1 Boneless pork loin roast, (3-1/2 lbs.), rolled
1 teaspoon Dried rosemary, crushed
1/4 teaspoon Cracked black pepper
16 ounces Cranberry sauce (canned)
1 Orange, peeled & sectioned
Cook almonds in butter in large skillet over medium-high heat until brown. Add onions and celery; cook until vegetables are tender crisp. Stir in rice, 1/2 cup orange juice, orange peel, 1 teaspoon ginger, and salt; set aside. Untie roast, and spoon rice mixture lengthwise between loins. Retie roast securely with string at 2- to 3-inch intervals; place, fat side down, on rack in shallow roasting pan. Combine rosemary and pepper; sprinkle over roast. Insert meat thermometer. It should not touch stuffing or fat. Bake at 325 F. for 1-1/2 hours. Combine cranberry sauce, remaining orange juice, remaining ginger, and orange in small saucepan; stir well. Simmer over medium heat 25 minutes, stirring occasionally. Brush about 1/2 cup cranberry mixture over pork. Bake an additional 15 minutes or until meat thermometer registers 170 F. Let roast stand 10 minutes. Remove string and slice roast. Serve with remaining cranberry sauce.
Makes 6 to 8 servings
Dessert
Strawberry Pretzel Salad
(The BEST thing I have ever tasted!)
2 cups crushed pretzels (about 4 cups uncrushed, or 6 oz)
3/4 cup melted butter
1/4 cup sugar
1 (9-oz) tub Cool Whip non-dairy whipped topping
1 cup sugar
8 oz cream cheese
2 (3-oz) packages strawberry Jello gelatin dessert
1 (16-oz) package frozen sweetened strawberries.
1 cup boiling water
Crust:
Combine pretzels, butter, and 1/4 cup sugar. Press into 9" x 13" baking dish and bake at 350 for 10 minutes. Cool to room temperature.
White Layer:
Cream together cream cheese and 1 cup sugar. Fold in Cool Whip. Spread over pretzel crust.
Red Layer:
Dissolve gelatin in boiling water. Stir in frozen strawberries, Chill until partially set (about 1 hour) and spread over white layer.
Chill until set and serve.
